Overnight pizza dough

Letting the dough rise overnight in a cool place gives the base a unique, deep flavour.
Prepare the dough 1 – 2 days before serving pizza.

(5 pizza bases)

Ingredients
• 500 g wheat flour
• 3,2 dl water
• 2 tsp salt
• 5 g dry yeast
• 2 tbsp olive oil

Method
1. Combine flour, salt and yeast in a bowl. Add the flour mixture to lukewarm water. Add olive oil.
2. Knead for about 10 minutes, until it becomes slightly tacky. Using a stand mixer will help you to reach the optimal result.
3. Let the dough rest and rise for 20 minutes, under a cloth or in a covered bowl. When the dough has risen slightly, put it in the fridge. Let rise in the fridge for 1 – 2 days.
4. Take the dough out of the fridge about an hour before baking. Divide into 5 equal pieces. Place a dough ball on a floured surface and stretch it with your fingers or with a rolling pin.
