Frutti di mare
The Frutti di Mare pizza recipe by the Finnish food blogger Jaana Lindström uses cold-smoked salmon and crayfish tails. You can also add mussels.
Ingredients
• 8 dl durum flour
• 3-3½ dl lukewarm water
• 25 g yeast
• salt
• olive oil
• 100-150 g smoked salmon
• 1 pack crayfish tails with shells (frozen)
• black pepper
• shredded mozzarella
• lemon juice
• dill
Tomato sauce:
• 3-4 ripe tomatoes
• 2 cloves of garlic
• a handful of basil leaves
• olive oil
• salt
• black pepper
Method
1. Defrost the crayfish according to the instructions on the package. Dissolve instant yeast in water. Add salt, olive oil and flour. Knead until the dough no longer sticks to the edge of the bowl. Cover the dough with a kitchen towel, and let rise for 30 – 60 minutes.
2. As the dough is rising, prepare the tomato sauce. Put all of the ingredients in a food processor, blend until almost smooth. Put aside to season.
3. Heat up the MyPizza oven according to the instructions on the package. If you’re using a domestic oven, heat it up to the highest cooking temperature.
4. Sprinkle the work surface with flour. Using a rolling pin, roll the pizza base thin. Make 4 small pizza bases, and spread tomato sauce on top. Shred mozzarella to cover them, place slices of salmon and some crayfish tails on each pizza. Top with black pepper, a dash of olive oil, and lemon juice.
5. Bake in a domestic oven, or in the front section of the MyPizza oven, one pizza at a time, rotating them every now and then, to ensure that the end result is perfect.
6. Decorate the pizzas with dill, and sprinkle some lemon juice on top. Then just tuck right in!
