Gluten-free dessert pizza

Fresh apricots, maple syrup and vanilla ice cream are perfect for this delicious dessert pizza. These ingredients are enough for one pizza. Scale up the recipe if you’re baking for a larger crowd!

Ingredients
• 3 – 4 tbsp gluten free flour mix
• 1 tbsp gluten free rolled oats
• 1½ dl lukewarm water
• a bit of yeast
• 2 tsp honey
• a dash of salt
• a splash of olive oil

Filling
• apricot segments, or other fruit
• brown sugar
• gluten free rolled oats to sprinkle on top
• vanilla ice cream
• maple syrup

Method
1. Make the dough. Mix the yeast with lukewarm water. Add the honey, olive oil and salt. Add the flour, a little bit at a time, and mix with a wooden spoon. Cover the dough with a kitchen towel, and let rise for 30 minutes.
2. While the dough is rising, warm the MyPizza oven up according to the instructions.
3. Place the dough on a work surface sprinkled with rolled oats. Using a rolling pin, roll the pizza dough until it is thin. Add the fruit segments and brown sugar on top.
4. Using a pizza peel, lift to the MyPizza oven, one at a time, and bake in the front section of the oven. Check the baking process, and rotate the pizza every now and then, so that it would cook evenly on all sides.
5. Take the pizza out of the oven. Serve immediately, with ice cream and maple syrup.
